Freshness of raw material is based on correct treatment of fish on-board fishing boats and vessels. If the treatment on-board is not good enough the results will be bad quality raw material. The most common defects are blood in flesh because of limited bleeding time, too slow chilling and limited cleaning after gutting. This leads to blood spots in flesh and darker color of flesh, more gaping and limits lifetime of the fish.
